OPEN the FISH
 
 
Fish Market in Japan
 
In Japan ,we open a fish body after getting it  from sea.
After that ,we dry it.
 
Usually the fish  through  this   process is used  for  grill , not  for sashimi(eating  a raw fish)
 
After opening and drying  it ,  the taste gets much much  better.
That's really fantastic!
